In a large mixing bowl whisk together eggs, milk, and sour cream. Next add the pancake mix and the rest of the dry ingredients. Stir together until well incorporated. In the meantime heat oil with a high smoke point to 375 degrees in a heavy pot. Put batter into a gallon zip lock bag and cut a corner of the bottom of the bag off to be able to stream the batter into the hot oil. Cook on both sides 2-3 minutes or until golden brown. Remove from hot oil and sprinkle with confectioner sugar.
