- 1 cup GF Harvest Quick Oats

- 2 eggs
- 1 cup milk
- 1 cup sugar
- 1/4 cup oil
- 1 teaspoon vanilla
- 1 1/2 cups GF Harvest Pancake Mix
- 1/2 cup brown rice flour
- 2 tablespoon potato starch
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon

Instructions
- In a mixing bowl combine eggs, oil, and sugar. Mix well with an electric mixer. Add milk and vanilla and mix in. Combine remaining dry ingredients to the wet mix and beat until everything is well combined. Grease a 9x13 cake pan and pour batter into the bottom. In a separate bowl combine softened butter, brown sugar and cinnamon. When well combined add the quick oats and sprinkle on top of the cake batter. Bake at 350 for 35 minutes or until a toothpick comes out clean. Serves 18
